Chewy chocolate chip cookies

OK, chocolate chip cookies are simple and easy to make, right? But don't you hate it when your cookies aren't as chewy as you would like? Well, I've done some experimenting and here is a recipe that will guarantee you chewy chocolate chip cookies! The secret? Freeze the dough before you bake!

Here's the recipe:

Ingredients
2 ¼ cups AP flour
1 tsp baking powder
2 sticks butter (melted)
½ cup white sugar
2 cups brown sugar
2 eggs
2 tsp vanilla extract
12 oz Chips
1 tsp salt

Preheat oven to 350°. Line cookie sheets with parchment paper. Sift flour with baking powder, salt
Beat butter with sugars until light and fluffy. Beat in eggs and vanilla. Add in dry and mix parts at a time until just incorporated. Stir in chips (any chips you want!!!)

Chill in fridge for at least 1 hour or 30 minutes in the freezer. After that, scoop the batter into your hands and roll them into perfect balls, this will allow the cookies to evenly spread out. Scoop batter onto cookie sheets, leaving 3” between each.

Bake on lower and middle racks for 12-14 minutes until edges look set (turning the sheet once after 6 minutes) Allow to cool for 5 minutes on sheet, then transfer to wire rack. Enjoy!

  1. Tricia isn't giving enough credit to the "science" that went into creating a chewy cookie. In addition to freezing the dough, melting the butter, the increased ratio of brown sugar to white sugar, and the of baking powder (vs. baking soda) all lead to a chewier cookie.
